Hazelnut and Chocolate Chip Scones

Hello Hello!
Today has been pretty busy. Just a lot of boring school work and such….you know the drill.
I worked for a good solid while and got an itch to bake. I hadn’t made scones in a while, so I lucked out on finding a fabulous and healthy recipe and whipped up a quick batch. Total time was about 30 minutes. See, baking isn’t all about flour bombs in your kitchen or huge messes to clean up. Some things you can make in a snap!
I found this recipe on Savvy Eats that was posted as ‘Chai Tea Scones’ however I used my favorite Chocolate Hazelnut Tea from Stash Tea Company. I also added in some semi sweet chocolate for a little added sweetness.
For one LARGE scone, only about 174 calories and 6 grams of fat. Not too shabby.
The scones were fluffy and delicately scented with hazelnut/chocolate flavor. Holy YUM.
Chocolate Hazelnut Scented Scones
Makes 8 large scones
2 1/2 c whole wheat flour
1/2 c. brown sugar
2 T baking powder
1/4 t salt
2 T chia seeds
1/3 c. canola oil
1 c. skim milk
3 bags Stash Chocolate Hazelnut Tea (cut open bag)
1/2 c semi sweet chocolate

1. Mix dry ingredients together
2. Add oil, work into flour
3. Add milk in 3 pours, knead into a soft, sticky dough
4. Stir in chips and tea
5. Dump onto sheet pan and pat into 1/2 inch think round
6. Cut into 8 scones and separate onto sheet
7. Bake at 400 for 15 minutes


I skipped my workout today because I have lots of working out to do in the next few days and I have the Turkey Trot on Sunday here in Athens! Going to be lots of fun. A GREAT weekend ahead!

Dinner was veggies!
I roasted up a small sweet potato (fries), mushrooms and cauliflower
I love the fact that I can eat a TON of vegetables and not feel guilty!
SO good.


Off to go hang out with some friends tonight. Haven’t seen Michael since Sunday!

Whole Wheat Banana Muffins


I made some super healthy banana chocolate chip muffins the other day and froze a big batch of them for quick on-the-go breakfasts….I mean who doesn’t love bananas with chocolate chips?? Although they are not super decadent, these little gems are perfect for a chocolate/ pastry craving.


Only 106 calories per muffin and 1.5 grams of fat…what more can you ask for? GUILT Free!


SERVES 16

Ingredients

Directions

    Stir together flour, baking powder and soda. Set aside.

    With electric mixer, beat sugar and yogurt. Add eggs, one at a time, and milk, beaintg until smooth after every new addition.

    Add flour mixture and banana alternately to creamed mixture. Fold in dark chocolate chips.

    Turn batter into lightly greased 8x4x2-inch loaf. Bake for 60-65 minutes at 350degrees.
