I woke up this morning feeling a bit poofy.
This could be from the numerous brownies, ice cream and cheeseburger I ate this week.
My body wants more veggies….it’s tired of sugar because it makes me feel ill and sluggish!
I thought I would send out a quick post on some fantastic veggie recipes. Including Roasted Broccoli, which I have fallen madly in love with.
Barefoot Contessa’s Roasted Broccoli (recipe adapted)
Her recipe calls for parmesan, lemon and pine nuts….but I cooked up some with sesame seeds which turned out to be YUM-O. (P.S. Pine nuts are now $12 a pop, so save your money kids and forget the pine nuts….although, I promise,I adore them too.)
Begin this dish with your desired amount of broccoli florets, wash and dry.
Toss in 2 tbsp. EVOO, sea salt, and black pepper
Spread on a baking sheet and sprinkle with sesame seeds (these get nice and toasty)
With your oven set at 425 degrees, roast for 15 minutes, then broil for 5 until edges are browning
Let me tell you, this broccoli is like candy….I simply cannot get enough of it! Please, try and behold, your new favorite way of preparing broccoli.
Honey Roasted Sweet Potatoes
2 pounds sweet potatoes, peeled and cut into cubes
Toss with 2 tbsp. EVOO and 2 tbsp. honey and 1 tsp. lemon juice
Sprinkle with sea salt and bake at 350 degrees for about an hour or until potatoes are tender
*Sometimes I will add fresh herbs such as thyme or rosemary for an added touch of flavor*
I am so in love with roasting vegetables. The flavor is amazing, so much better than boring steamed. Most veggies can be roasted, so why not try corn, cauliflower, green beans, carrots….try them all!!! Broccoli and Sweet Potatoes for tomorrow night’s dinner is a definite.
Your body will thank you if you feed it some love!
