Why Good Food “Works”

I was absent from blogging yesterday, but I am back! School is finally picking up and my workload gets a little worse everyday. Last night, for instance, I remembered about a Spanish composition that was due at 8AM this morning. I figured this out at 11 pm. Ouch.

Breakfast this morning helped my sleepy disposition.

Last night, while I was care-free and homework free I whipped up a recipe from Real Simple magazine that I found while pinning away on Pinterest.

Roasted Tomatoes with Shrimp and Feta

Ingredients
  • 3 large tomatoes, cut into eighths (roma)
  • 2 tablespoons olive oil
  • 2 tablespoons minced garlic
  • kosher salt and black pepper
  • 1  pounds medium shrimp, peeled and deveined
  • 1/2 cup chopped parsley
  • 2 tablespoons fresh lemon juice
  • 1 cup reduced fat Feta, crumbled

Cut the tomatoes into fourths. Place in a baking dish. Drizzle with olive oil, sprinkle with garlic, salt and pepper. Place in the oven on the top rack. Bake at 450 for 20 minutes.

When the tomatoes are done, pull them out and stir in the shrimp, parsley and lemon juice. Top the entire dish with the crumbly feta. Place back in the oven for another good 15 minutes until the shrimp and pink and everything is bubbly and delicious.

I served my shrimp up plain last night, but today at lunch I had it with some rice. I forgot how good plain old rice is…

Some of you..mostly college friends…may think why or how does Morgan make all of these complicated recipes. It’s because I care about food. Why throw a pop tart in my mouth when I can make egg whites or a protein pancake in under 10 minutes?

You see, food is energy and in order to feel my best, I need a lot of quality food sources. Yes, it costs more to eat shrimp instead of lean cuisine for dinner, but at least I feel like I am full and happy instead of unsatisfied and miserably tired.

Take the time to try out a new recipe next week. All of my recipes, especially my entrees are affordable and savvy on time. I challenge you to make an entire meal by yourself. You will be proud of yourself!

Good food just works for me. It’s as simple as that.

Amazeballs.

I finally made Fitnessista’s chocolate peanut butter protein balls….aka-AMAZEBALLS!!

These little babies were good!!! The perfect filling snack for class, the gym, a midnight snack….Smile

Here’s how you make them!

  • 2 T of vanilla protein powder
  • 2 T of nut butter, like natural peanut butter
  • 2 T of shredded coconut
  • 1 T of maple syrup or honey, you can also use agave ( I used sugar free maple syrup)
  • a pinch of salt, cinnamon

In a food processor (or blender), pulse together the protein powder, nut butter and coconut. Pulse till it looks like wet sand. Like this.

Next add in the honey or syrup, salt, cinnamon and sweetener. I used sweetened coconut flakes, so I didn’t add any sweetner….just sugar free maple syrup. Pulse this together a few more times until everything comes together. Then add in a small handful of dark chocolate chips.

Pulse the chips in just enough to break them up.

Now, it’s time to roll the mixture into a ball shape.

If the mixture doesn’t form well, maybe add a little more nut butter or syrup!

Keep these in a container in the fridge. Eat for snack or a small dessert!

In other news:

I am babysitting and working this weekend, so I am a bit distracted. I also start class on Monday! Eeek.

I am also so happy that everyone liked the Guest Post!!! I thought Hannah did a wonderful job telling her story!

For lunch, I had a grilled turkey and cheese sandwich! On the bread I spread a bit of Trader Joe’s bruschetta….yum! I also ate a few grapes and a plum.

Becoming a Morning Person

Working out in the morning is the key for me to staying sane throughout the week. Yes, I wake up before 8 am most days and Yes, sometimes it sucks. I have trained myself over the last year to become a “morning person” in order to be as productive as possible and keep up with a healthy lifestyle. Hitting the gym or lacing up my shoes for an early morning run allows me to focus on my goals for the day and simply “get it over with.” The longer I wait around, the less likely I will achieve. The chances of me going to the gym after a long day at school or work is slim to none. Finding what works best for you is the most important aspect of maintaining the lifestyle you want.

Today, I set my alarm for 8 and immediately put on workout clothes. This got me ready to go first thing which is typically a huge motivator. Sometimes, I have even been known to sleep in running clothes so that I can literally head out the door at 6AM.

This morning, my roommate and I ate breakfast and headed to our gym for our respective workouts.

I completed a variation of a workout that I found on Gina’s page. It contained Supersets, which means I did each exercise back to back before moving onto the next set.

Set 1: Bicep Curls, Tricep Dips (15 reps, 3 times)

Set 2: Sumo Squats (25 lb 12 reps, 3 times), Step Ups-  ( 10 reps per leg, 2 times)

Cardio Blast: Run at a comfortable pace for 5 minutes, increase incline by 1.0 after each minute passes)

Set 3: Pushups (3 sets of 12 reps), Wide-Grip Bent over Row (3 sets of 12 reps)

Set 4: Crunches on a Stability Ball, Supermans (3 sets of 15 reps)

Lunch

For Lunch, I had another Grilled Vegetable Sandwich. It was just so yummy. I love the sun-dried tomatoes!

For a little sweetness I had a few sliced strawberries. I also had an Oikos Honey Fig yogurt for some extra protein!

I’m off to pick up a parking pass and go to the doctor…I’m getting my ear checked out! Have a great day!

Awesome August

Gina over at the Fitnessista had the most fun list of her top ten ways to make the best of the month ahead…August!

I am stealing her idea and making my own list!! So here it goes…Morgan’s list of ways to make August awesome 🙂

1. Try a new recipe. How good does a platter of the famous PF Changs lettuce wraps sound?! I have found the recipe via Pinterest and can’t wait to try it. New recipes make me happy.

 2. Go out with friends. I have been missing my roomates like crazy! Mary has been living life in Australia with her boyfriend while Rachel and I have been busy running around away from the apartment. I can’t wait for all of us to be back together. I was thinking we should go try Artini. Art and Martinis!

3. Organize! It’s important to me to keep things neat and orderly in the apartment. I’ve already begun thinking about organizing the pantry and deep cleaning the apartment. Clean=happy.

4. Get back to Bodypump! After traveling for the last month, I have missed my beloved Bodypump classes! I want to incorporate at least two classes a week into my half marathon training.

5. Scope out Fall clothes. I REALLY love fall. Cozy scarves and boots are my favorites. Again I have been “pinning” some of the looks that I hope to re-create when I do some fall shopping!

6. Make these little energy bites. I think these will be great to take to class for snack!

7. Create a new goal. I started training for my first half-marathon! I want to keep my head focused on building mileage, but trying to have fun while I’m at it by running with friends! Here’s to running in the hot Georgia heat!

8. Go to the lake. My grandparents just moved to their lake house and now that it is their permenant home, I can’t wait to visit!

9. Spend time at the pool. Before classes get too crazy, I want to spend more time at the pool! I haven’t been in Athens to do so in forever!

10. Spend time with the ones you love! On Wednesday, I’ll be flying to Pittsburgh to spend close to a week with Michael. Can’t wait…we have to celebrate his birthday!

In other news….I had a rather tasty lunch today. Roasted teeny tiny potatoes from trader joes and shrimp! I tossed everything in olive oil, rosemary and other spices and threw it all in the oven! Simple…with some green from a lovely kiwi!
