This morning I woke up and went to walk at Mountain Park with Mary, my best friend and future roommate!!! YES! We walked three miles, which was more than enough to build up an appetite for breakfast. We decided on good old IHOP and called our friend Lisa to meet us, whom I haven’t seen since leaving GCSU. It was fantastic to catch up over coffee and breakfast (for 3 hours). I love lazy mornings with a hearty breakfast! I hope that we can all get together again. I can’t think of a more perfect morning.
After picking up contacts in Snellville, and sitting in horrendous traffic on Hwy. 78, I headed on home to relax and prepare veggies for dinner! Roasted broccoli and sweet potatoes were present as well as these little babies….

While things were in the oven, I went outside to take pictures of lovely flowers in my mom’s garden.

Today was such a nice day. It’s the simple things in life!
Today I was up at 6 am and ready to hit the gym. After being crammed with finals and adjusting to my new work schedule, my body has been neglected. Bad, bad, bad. 😦 If I miss more than two days in between gym visits, I am most likely not going back for the week. I need discipline in my life!
So, I woke up early, grabbed a quick cup of coffee and was out the door! I hit the weights (only girl in the weight room with about 5 burly men, awkward!) and did a full body workout. After, I did some light cardio on the elliptical for about 30 minutes. And, by light, I mean I watched Good Morning America. Hey, did you know two of the Dixie Chicks have formed a NEW band called, the Court Yard Hounds
? I love the Dixie Chicks, so I am glad at least two of them are making a come back!
I stopped by Kroger to grab a few things and then headed home to shower and eat breakfast. Today, I decided to re-create a Starbucks Frappucino! A little protein powder, instant coffee (my new fave) and banana….and yippee! A creamy, chocolatey coffee blend. It was so yummy and almost decadent with a kick from the coffee!
Adding instant coffee or espresso to chocolate intensifies the flavor!
1 banana, sliced
2 tsp. cornstarch ( I like mine thick)
2 tsp. unsweetened cocoa
1 Nescafe Instant Coffee Single
2 scoops of chocolate whey protein
a little skim milk
Just blend and adjust to your faux-frapuccino needs!
I am off to write my final paper of the semester and watch the Doctors
