Awesome August

Gina over at the Fitnessista had the most fun list of her top ten ways to make the best of the month ahead…August!

I am stealing her idea and making my own list!! So here it goes…Morgan’s list of ways to make August awesome 🙂

1. Try a new recipe. How good does a platter of the famous PF Changs lettuce wraps sound?! I have found the recipe via Pinterest and can’t wait to try it. New recipes make me happy.

 2. Go out with friends. I have been missing my roomates like crazy! Mary has been living life in Australia with her boyfriend while Rachel and I have been busy running around away from the apartment. I can’t wait for all of us to be back together. I was thinking we should go try Artini. Art and Martinis!

3. Organize! It’s important to me to keep things neat and orderly in the apartment. I’ve already begun thinking about organizing the pantry and deep cleaning the apartment. Clean=happy.

4. Get back to Bodypump! After traveling for the last month, I have missed my beloved Bodypump classes! I want to incorporate at least two classes a week into my half marathon training.

5. Scope out Fall clothes. I REALLY love fall. Cozy scarves and boots are my favorites. Again I have been “pinning” some of the looks that I hope to re-create when I do some fall shopping!

6. Make these little energy bites. I think these will be great to take to class for snack!

7. Create a new goal. I started training for my first half-marathon! I want to keep my head focused on building mileage, but trying to have fun while I’m at it by running with friends! Here’s to running in the hot Georgia heat!

8. Go to the lake. My grandparents just moved to their lake house and now that it is their permenant home, I can’t wait to visit!

9. Spend time at the pool. Before classes get too crazy, I want to spend more time at the pool! I haven’t been in Athens to do so in forever!

10. Spend time with the ones you love! On Wednesday, I’ll be flying to Pittsburgh to spend close to a week with Michael. Can’t wait…we have to celebrate his birthday!



In other news….I had a rather tasty lunch today. Roasted teeny tiny potatoes from trader joes and shrimp! I tossed everything in olive oil, rosemary and other spices and threw it all in the oven! Simple…with some green from a lovely kiwi!

Blueberry Oatmeal Pancakes

Good Morning and Happy National Blueberry Pancake Day!
Because pancakes are one of my most favorite comfort foods, I felt obliged to celebrate this Friday morning.
Pancakes are some of the most delicious breakfast items and can be very unforgiving in terms of carbo-loading! Not to worry though, these pancakes are completely free of white flour, sugar and fat!
Heart Healthy Oatmeal Pancakes
1 cup of almond milk, skim or water
3/4 cup old fashioned oats
3/4 cup oat flour
1 tsp baking powder
1/4 tsp sea salt
1 tsp cinnamon
1/4 cup blueberries, frozen or fresh
Note: the original recipe called for heating the milk and doing all sorts of extra stuff, but I wasn’t feeling that was necessary. However, you can try it if you’d like!
Combine all ingredients in a bowl, heat pan or griddle to med heat. These pancakes took a little longer to cook than regular pancakes, just watch them closely and make sure the middle is cooked!

I served my oat cakes with sugar free syrup! I was amazed at how full I was after eating these. SO good tasted like a warm bowl of oats!!

Slow Cooker BBQ Chicken

Tangy. Saucy. Tender. BBQ

This recipe is such a great one! The chicken is super healthy, but totally comforting.
Perfect for salads, sandwiches or just a little snack!
Not to mention the EASIEST thing I have ever made in a crock pot! Love it!
Slow Cooker Barbecue Chicken
4 boneless, skinless chicken breasts, frozen
your favorite spice rub for meat
1 1/3 cup water
1 cup apple cider vinegar
1/2 cup of your favorite barbeque sauce (I used Williamson Bros. Spicy Chipotle)
Salt and Pepper

Sprinkle rub over chicken
Mix vinegar and water and pour over meat in a crock pot or slow cooker
Pour sauce over and mix a little
Add salt and pepper, a teaspoon or so each
Cooke overnight, about 6 or 7 hours
The chicken is so tender and flavorful. I love the tang that the cider vinegar adds!
I ate my sandwich on a toasty onion roll with some thinly sliced red onion on top!
Oh, of course I added more sauce…mmmm.

Starbucks Revisited!

Today I was up at 6 am and ready to hit the gym. After being crammed with finals and adjusting to my new work schedule, my body has been neglected. Bad, bad, bad. 😦 If I miss more than two days in between gym visits, I am most likely not going back for the week. I need discipline in my life!
So, I woke up early, grabbed a quick cup of coffee and was out the door! I hit the weights (only girl in the weight room with about 5 burly men, awkward!) and did a full body workout. After, I did some light cardio on the elliptical for about 30 minutes. And, by light, I mean I watched Good Morning America. Hey, did you know two of the Dixie Chicks have formed a NEW band called, the Court Yard Hounds? I love the Dixie Chicks, so I am glad at least two of them are making a come back!
I stopped by Kroger to grab a few things and then headed home to shower and eat breakfast. Today, I decided to re-create a Starbucks Frappucino! A little protein powder, instant coffee (my new fave) and banana….and yippee! A creamy, chocolatey coffee blend. It was so yummy and almost decadent with a kick from the coffee!

Adding instant coffee or espresso to chocolate intensifies the flavor!

1 banana, sliced
2 tsp. cornstarch ( I like mine thick)
2 tsp. unsweetened cocoa
1 Nescafe Instant Coffee Single
2 scoops of chocolate whey protein
a little skim milk
Just blend and adjust to your faux-frapuccino needs!
I am off to write my final paper of the semester and watch the Doctors.
