Hooray for New Recipes

Has anyone ever tried to move their entire iTunes library to a new computer. Trust me..not fun. Although today was uneventful, I made sure I cooked according to plan.

Dinner was a spoof on Monday’s dinner…I made pulled chicken earlier in the day and topped lettuce wraps with the chicken, barbeque sauce and a little cheese. Along the side were rutabaga fries! All around a tasty meal, no?
Pulled chicken is one of those things that I make very often. Having a container of shredded chicken available throughout the week makes for easy meals and lots of variety! Salads, tacos, enchiladas etc! It can’t get any easier than this recipe.
Crock Pot Pulled Chicken
1 pound boneless skinless chicken breasts
Chicken broth or stock
Salt, pepper and cayenne pepper
Just place the chicken in a crock pot, sprinkle with seasonings (any you like) and cover with chicken broth (just until meat is covered). Heat on low for 6 to 8 hours.
The chicken will be very tender and can easily shred with a fork!

Rutabagas are a vegetable new to my diet. I love any roasted root vegetable, so thought these fries would be good too! Thanks so much Julie for posting your helpful video!
Rutabega Fries
First, grab a sharp knife, a vegetable peeler and your rutabega!
Peel the waxy skin off to reveal the white part of the veggie!

Cut into thick slices.
And then cut the slices into ‘fries’
Sprinkle with any seasoning you like.
Today I used cajun seasoning!

Be sure to spray your fries with either cooking spray or toss them will EVOO.
Roast at 425 degrees for 25min or until desire doneness!

These look just like french fries to me and taste great with a lil ketchup!
It’s nice to try new things!!
Tonight, I am just hanging out and watching the NEW episodes of The Middle and Modern Family. Two of the most hilarious shows out there. Gotta love little Brick!
